BAKED FRITTATA
2 dozen Eggs - well beaten
1 envelope Lipton Onion Soup Mix (savory herb & garlic) - beat into eggs well
1 cup sour cream - blended into eggs
8 ounce package Fine Shredded Sharp Cheddar Cheese - mix into eggs
2.8 ounce package Hormel Black Label Real Bacon Pieces - mix into eggs
60 ounce package California Blend Frozen Vegetables (Broccoli, Carrot, Cauliflower) - cooked in microwave and blended fine (makes 4.5 cups blended) then mixed into egg mixture
It will be a fairly thick mixture. Pour into two prepared 9x13 pans. Bake at 400℉ for 40 minutes.
Cool, cut into servings (10 per 9x13), baggie individually and freeze.
For two people, put two frozen servings on microwave safe plates and defrost for 8 minutes. Turn over and cook on high for 10-15 seconds.

Easy and Fast Healthy Breakfast
Diana’s Oatmeal Breakfast
Serves 1
Quaker Oats 1-minute Oatmeal 1/3
cup
Dark Brown Sugar 1
teaspoon
Sunmaid Rasins 1
Tablespoon
Walnut Pieces 1
Tablespoon
Ground Cinnamon 1/8
teaspoon
Benefiber 2
teaspoons
Water 2/3
cup
Apple or other fruit bits ¼
cup
Combine everything except the apple or fruit bits in a microwavable
bowl. Stir to combine and distribute
ingredients throughout the water. Add
the fruit bits, and microwave on high for 1 minute 35 seconds.

We've been married almost 35 years, have three sons, two daughters-in-law, two granddaughters (age 12 and 18 months), and another grandbaby on the way. I often think of things I want to say to someone in my family, observations or advice. Like most people, my family members aren't very interested in taking advice! LOL! All these "words of wisdom" that I want to share go unspoken. Now there is a place where I can capture them, just in case at some time in the future my family gets interested in some advice. You are welcome to come along and "listen" and tell me what you think about the observations and advice I put out.
